Frequently asked questions
Turkish delight, or lokum, is a soft, chewy confection made from sugar, water, and starch, and flavored with ingredients such as rose, citrus, or nuts. A centuries-old Ottoman tradition, it is known for its melt-in-the-mouth texture and is a symbol of hospitality. For more info please check our blog post from here.
Lokum originated in the Ottoman palace kitchens in the late 18th century and spread across the empire, reaching Europe by the 19th century through trade. The name comes from the Arabic phrase rahatü’l-hulküm, meaning “comfort of the throat,” later shortened in everyday Turkish. “Turkish delight” is the name coined for Western audiences in the 19th century.
At Marsel, we pay great attention to how much sugar we use. Our recipes contain less sugar than traditional Turkish delight, focusing instead on achieving a balanced sweetness that complements — rather than overwhelms — the natural flavors of each lokum.
Lokum uses a few simple ingredients: sugar, water, starch, and a small amount of citric acid, with flavorings such as rosewater, citrus, or nuts. Sugar and water are cooked into a syrup, combined with a starch paste to form a soft gel, flavored, poured into trays to cool, then cut into cubes and dusted with starch or powdered sugar. At Marsel Delights, we flavor our lokum with natural ingredients only.
Unopened, lokum can last up to one year, and once opened it is best enjoyed within three months. Keep it in a cool, dry, dark place in an airtight container, away from sunlight and heat. Do not refrigerate it, as moisture affects texture and flavor.
Lokum is traditionally served with Turkish coffee or tea, and it works with modern coffee too. Pistachio or rose suits espresso, pistachio or hazelnut suits cappuccino, hazelnut suits latte and Turkish coffee, and pomegranate suits filter coffee. A small piece alongside a sip lets the sweetness balance the bitterness.
